A ketogenic diet is very different from the standard American diet we were taught growing up (anybody else remember the gigantic space grain took up on the food pyramid??) and it can be a bit daunting to make the switch. Not only that, but it seems like life just keeps getting busier and busier these days, and sometimes you just want to take some of the guesswork out of what you eat to make life a little less overwhelming, but still keep in line with your dietary goals. Spent grain contains reduced active carbohydrates since so much is removed during the barley mashing process. What IS left behind is a whole lotta protein and fiber! In fact, as we’ll explain later in this post, spent grain flour beats out both coconut and almond flour in terms of nutrition, leading the pack with the least carbs, the least amount of fat, and the highest amounts of protein and fiber. Simply put, the beer making process pretty much takes all of the not-so-great stuff (the carbs and the gluten) out of the barley, and leaves the nutrition behind!

In reality, since spent grain is actually made from the leftovers of the beer making process (more on that later), almost all of its carbohydrates are removed during this process, leaving a high protein and high fiber product behind, that can be used to make a super healthy alternative flour. Spent grain is all around awesome, being both environmentally friendly and incredibly good for you. Its fiber content alone is enough reason to add it to your diet, but it’s also incredibly high in protein.
