INGREDIENTS

1 cup rolled oats

1-1/2 cup grated carrots

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon ground ginger

1 cup pecans or walnuts, roughly chopped

1/4 cup raisins
-
1/2 cup honey or maple sugar
-
1/2 cup melted coconut oil
DIRECTIONS:

Preheat over to 350 deg F

Place coconut oil container in hot water to melt coconut oil

Whisk together honey/syrup and coconut oil
-
Mix all ingredients (except for raisins) together

Spread the mixture evenly over a large baking sheet and bake for 15 minutes

Take out of oven and spread raisins on top of the granola mix

Bake for another 5-10 minutes
