Reduced Gluten Carrot Cake Chewy Granola

INGREDIENTS

  • 1 cup Barely Barley Low Carb Flour

  • 1 cup rolled oats

  • 1-1/2 cup grated carrots

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground ginger

  • 1 cup pecans or walnuts, roughly chopped

  • 1/4 cup raisins

  • 1/2 cup honey or maple sugar

  • 1/2 cup melted coconut oil

DIRECTIONS:

  1. Preheat over to 350 deg F

  2. Place coconut oil container in hot water to melt coconut oil

  3. Whisk together honey/syrup and coconut oil

  4. Mix all ingredients (except for raisins) together

  5. Spread the mixture evenly over a large baking sheet and bake for 15 minutes

  6. Take out of oven and spread raisins on top of the granola mix

  7. Bake for another 5-10 minutes

  8. Enjoy!
