Reduced Gluten Banana Chocolate Chip Pancakes

YIELD - 4 SERVINGS OF PANCAKES (ROUGHLY 16-20 TOTAL PANCAKES)

INGREDIENTS: 

  • 1 + 1/3 cups Grain4Grain pancake & waffle mix

  • 2 cups vanilla coconut milk 

  • 4 whole eggs

  • 4 teaspoons vanilla extract 

  • 1 ripe banana 

  • 1/4 cup dark chocolate chips

DIRECTIONS:

  1. Heat up your griddle to medium high heat

  2. Mix the Grain4Grain pancake & waffle mix with, 4 eggs, 2 cups of vanilla coconut milk and vanilla extract

  3. Mix in the ripe banana until mixed well. Add more water if necessary

  4. Mix in chocolate chips

  5. Pour batter onto oiled, hot griddle in pancake sizes

  6. Flip pancakes once bubble start to appear

  7. Wait 1-2 minutes, serve, and enjoy!
