INGREDIENTS

3/4 cup brown rice flour

1 cup corn starch

1 tablespoon baking powder

1 teaspoon xanthan gum

1 teaspoon salt

1 cup sugar (or sugar substitute if you’re trying to reduce your sugar intake)

1 cup unsalted butter (that’s 16 tablespoons or 2 sticks)

3 large eggs
-
4 medium bananas (roughly 3 larger bananas)
DIRECTIONS:

Preheat over to 350 deg F

In a mixer, cream butter and sugar until light and fluffy then add eggs one at the time, beating well after each egg

With a hand mixer, puree bananas

Add pureed bananas to butter mixture

Add flour mix in small increments and whisk it until all is combine

Add walnuts, pecans, or chocolate if you wish
-
Pour batter into baking bread form lined with parchment paper

Bake in the oven on 350 deg F for 50-70 min. or until a wooden stick will come out clean.

Let cool for at least 5 minutes and enjoy! And cover it with icing if you’d like!
