Keto-Friendly, Reduced Gluten Waffle Pop

YIELD - 8 SERVINGS (ROUGHLY 8 TOTAL WAFFLE POPS)

INGREDIENTS:

TOPPING OPTIONS: 

  • Slivered almonds 

  • Coconut flakes 

  • Chopped pecans 

  • Semi sweet chocolate chips 

  • White chocolate chips 

  • Blueberries 

  • Whatever you want

DIRECTIONS:

  1. Heat up your waffle iron to medium high heat

  2. Mix the Grain4Grain pancake & waffle mix with: eggs, 1 cup almond milk and 1/2 cup coconut milk (1-1/2 cups water works well too), cinnamon, and vanilla extract

  3. Add more water if necessary

  4. Place wooden dowel into notches in waffle iron so that the dowel will extend into the middle of each waffle quarter when cooked.

  5. Pour batter onto oiled, hot griddle, covering the dowels.

  6. Wait until waffle maker says it’s done. Remove waffle then divide into quarters

  7. Melt chocolate in microwave for 20-30 seconds and pour over waffle quarters with other toppings
