Heat olive oil on medium/high heat in a skillet. Sauté onions for 3-4 minutes, until soft. Add mushrooms and cook for about 2 minutes. Add ground beef and cook until no longer pink, ensuring to break up the meat with a spatula. Add in a dash of your favorite seasoning. Add spinach and cook until wilted.
Blend egg whites and pancake mix until smooth.
Spray an 8x8 casserole dish with non stick spray.
Place cooked meat and vegetables into casserole dish. Pour blended pancake mix on top, ensuring mix covers the entire casserole dish. Bake for 20 minutes. Serve and enjoy.
