Keto-Friendly, Reduced Gluten Sweet and Savory Bake - By Tiffany Batsakis

YIELD - ONE 8 BY 8 INCH BAKE (4 LARGE SQUARES)

INGREDIENTS:

  • 2/3 cup Grain4Grain’s Pancake and Waffle Mix

  • 1 tbsp olive oil

  • 1/2 cup onions, diced

  • 1 cup mushrooms, sliced

  • 8 oz lean ground turkey or protein of choice

  • 3-4 cups Spinach

  • Seasoning of choice

  • 1 cup egg whites (carton) and 2 whole eggs

DIRECTIONS:

  1. Heat oven to 375 F.

  2. Heat olive oil on medium/high heat in a skillet. Sauté onions for 3-4 minutes, until soft. Add mushrooms and cook for about 2 minutes. Add ground beef and cook until no longer pink, ensuring to break up the meat with a spatula. Add in a dash of your favorite seasoning. Add spinach and cook until wilted.

  3. Blend egg whites and pancake mix until smooth.

  4. Spray an 8x8 casserole dish with non stick spray.

  5. Place cooked meat and vegetables into casserole dish. Pour blended pancake mix on top, ensuring mix covers the entire casserole dish. Bake for 20 minutes. Serve and enjoy.

This meal is also easily stored and reheated for breakfast in a hurry!
