Keto-Friendly, Reduced Gluten Peanut Butter Cookies (Video)

Just imagine that one of these cookies could be yours….or better yet….all of them. Oh the joys of low carb and high protein foods.

 

 

PREP TIME - 10 MINS

BAKING TIME - 15 MINS

TOTAL TIME - 25 MINS

YIELD - 12 COOKIES

INGREDIENTS:

  • 1 cup peanut butter

  • 1 cup equivalent sugar substitute (we used 1/2 cup Truvia’s Cane Sugar Blend)

  • 2 large eggs

  • 1/2 cup Barely Barley Low Carb Flour

DIRECTIONS:

  1. Preheat oven to 350 deg F

  2. Combine all ingredients

  3. Roll into 1-2 tbsp balls

  4. Press dough balls onto baking sheet using fork

  5. Bake 11-15 minutes

  6. ENJOY!
