Keto-Friendly, Reduced Gluten Blueberry Muffins

INGREDIENTS:

  • 1 + 1/3 cups Grain4Grain’s Pancake and Waffle Mix

  • 1/3 cup equivalent sugar substitute (we used 2tbsp + 2tsp of Truvia’s Baking Blend, but any sugar substitute will work)

  • 2/3 cup milk

  • 2 tablespoons vegetable oil

  • 6 eggs

  • 3/4 cups frozen blueberries

DIRECTIONS:

  1. Preheat Oven to 375 deg F

  2. Combine dry ingredients in bowl.

  3. Combine wet ingredients in separate bowl.

  4. Add wet ingredients to dry ingredients and mix.

  5. Fold in blueberries.

  6. Pour batter into 9 muffin liners

  7. Bake at 375 deg F for 15-18 mins
