Keto-Friendly, Reduced Gluten Blueberry Muffins

INGREDIENTS:

1 + 1/3 cups Grain4Grain’s Pancake and Waffle Mix

1/3 cup equivalent sugar substitute (we used 2tbsp + 2tsp of Truvia’s Baking Blend, but any sugar substitute will work)

2/3 cup milk
-
2 tablespoons vegetable oil

6 eggs
-
3/4 cups frozen blueberries
DIRECTIONS:

Preheat Oven to 375 deg F

Combine dry ingredients in bowl.

Combine wet ingredients in separate bowl.

Add wet ingredients to dry ingredients and mix.

Fold in blueberries.

Pour batter into 9 muffin liners

Bake at 375 deg F for 15-18 mins
