This waffle will be used for bread crumbs, and would ideally be made the day before in order to stiffen the best. But If you can only leave it out until it’s cold, that will work
Thoroughly rinse the chicken
Trim all fat and small pieces off of main pieces of chicken
Butterfly (cut in half horizontally) the thicker part of the chicken so that whole pieces are all the same thickness
Cover all pieces with buttermilk. Marinate this chicken overnight in the refrigerator for best results
After marinating, take the pre-made waffle and use a food processor to make bread crumbs
Place these bread crumbs in a bowl and add pecan pieces to the bowl and mix
Remove the chicken from the buttermilk and rinse. Let the chicken dry on a paper towel
