Keto-Friendly Fried Chicken

INGREDIENTS:

DIRECTIONS (NOTE: FOR BEST RESULTS, MARINATE CHICKEN OVERNIGHT AND MAKE WAFFLE FOR BREADCRUMBS THE NIGHT BEFORE):

  1. Using Grain4Grain Pancake and Waffle Mix and the 2 eggs, make a waffle (use directions on pouch).

  2. This waffle will be used for bread crumbs, and would ideally be made the day before in order to stiffen the best. But If you can only leave it out until it’s cold, that will work

  3. Thoroughly rinse the chicken

  4. Trim all fat and small pieces off of main pieces of chicken

  5. Butterfly (cut in half horizontally) the thicker part of the chicken so that whole pieces are all the same thickness

  6. Cover all pieces with buttermilk. Marinate this chicken overnight in the refrigerator for best results

  7. After marinating, take the pre-made waffle and use a food processor to make bread crumbs

  8. Place these bread crumbs in a bowl and add pecan pieces to the bowl and mix

  9. Remove the chicken from the buttermilk and rinse. Let the chicken dry on a paper towel

  10. Season the chicken with salt

  11. Place the seasonings and flour in a bowl and mix

  12. Dredge the chicken in the Barely Barley Low Carb Flour, then eggs, then waffle/pecan crumb mix (in that order)

  13. Heat the oil in a large skillet over medium-high heat

  14. Fry in batches until golden brown (usually between 2-3 minutes on each side)

  15. Once done frying, take chicken off pan and place onto paper towel to dry and cool

  16. While the chicken is cooling, make a fresh waffle using Grain4Grain Pancake and Waffle Mix and serve the chicken with waffles and syrup, if desired (there are some great lower carb syrups available (Walden Farm, Maple Grove Farm, or make your own!)
